Nikitaatsu Sake, Manyoshu, Princess Nukata: "At Nikitaatsu, we wait for the moon to set sail, and the tide is also right, so let's set sail now." Dogo's local sake "Nikitaatsu" was born with the meaning of "a port full of benevolence and joy."
We, Minakuchi Sake Brewery, were founded by Daishichiro Minakuchi, the first generation. Since our establishment in 1895, we have been the only sake brewery in the Ehime, Matsuyama, and Dogo areas, walking hand in hand with the "Dogo Onsen Main Building." Over 120 years have passed since then. Although times change, our stubborn commitment to taste remains unchanged. Nikitaatsu, a sake named after Iyo-Dogo, which was called "Nikitaatsu" in the ancient Manyo era, is a masterpiece that embodies the tradition of sake brewing and the skillful techniques of our brewers, refined over more than a century of history, spanning the Meiji, Taisho, Showa, and Heisei eras since our establishment.
