With Dogo Onsen
From Dogo Onsen, one of Japan's oldest and most renowned hot springs, boasting a history of some 3,000 years and even appearing in ancient texts like the Nihon Shoki and The Tale of Genji, if you walk a little west through the shopping street and down Atsuta-zu road, you'll find us, Minakuchi Shuzo, Dogo's sake brewery.
Since our founding in 1895 (Meiji 28), we have walked alongside the Dogo Onsen Main Building for over 130 years, diligently brewing sake here in Dogo.
A wide variety of alcoholic beverages
To date, we have produced various alcoholic beverages, including not only sake such as the renowned "Nikita-tsu," but also "Dogo Beer" (a craft beer for enjoying after a dip in Dogo Onsen), "Dogo Ale," "Dogo Shochu," and "Dogo Gin," all made with local ingredients.
Furthermore, we create a "Dogo Story" through these beverages and our directly managed restaurants, so that tourists visiting Dogo can take home many wonderful memories.
Minakuchi Sake
Mizoguchi Sake Brewery, which began with the first generation, Dairo Mizoguchi, has stubbornly continued to brew sake with meticulous care, even as times have changed. We brew sake that can be enjoyed in different moments, so that we can add color to everyone's daily lives with our sake.
Please enjoy the various sake from Mizoguchi, such as dry and crisp sake that gently accompanies your daily life, or sweet and rich aromatic sake that you would want to drink on a special day.
Nikita Tsu and Dogo Kurazake
Nikita-zu, which bears the name of Iyo-Dogo, praised as "Nigata-zu" in the distant Manyoshu, is a renowned sake from Minakuchi, where the tradition of sake brewing, honed over a long history, and the skillful techniques of the brewers come alive.
Dogo Kurazake is a local sake cherished and nurtured by the local community and the many tourists who visit Dogo.
Clear as water,
Rich as rice
For the primary ingredients, we mainly use "Yamada Nishiki," "Shizuku Hime," and "Matsuyama Mitsui" rice varieties from Ehime Prefecture. Grown with care in Ehime Prefecture, blessed with a warm climate and rich natural environment, these rice varieties are characterized by their large grains, high starch content, and low protein, making them exceptionally suitable for sake brewing.
Furthermore, by using subsoil water from Mt. Ishizuchi and the Takanawa Mountains, the highest peaks in western Japan, as brewing water, the moderate mineral content contributes to a mellow and gentle flavor.
Sake brewing: The art of tradition and innovation
We are constantly experimenting, building on the techniques passed down since our founding, in order to make our sake even more delicious, day by day. To achieve this, we not only incorporate the latest technology but also dedicate extra effort and refine our skills in the necessary processes to create the flavors we envision.
And to the future
Sake, the beverage we continue to brew, is a mysterious thing, possessing the power to connect many different things. We believe that it can create smiles within the bonds it forms, further expand those bonds, and beautifully color our daily lives.
Therefore, Mizuguchi Shuzo will continue to carefully and wholeheartedly brew sake, so that everyone's future may be filled with vibrant days.
