Dogo Shochu "Shinrokaku" is a new barley shochu that allows you to enjoy the aroma, richness, and crispness of "Hadakamugi."
The main ingredient is "Hadakamugi" from Chuyo, Ehime Prefecture. "Hadakamugi" from Ehime Prefecture accounts for over 40% of the national production, and Ehime Prefecture boasts the largest production volume in Japan for this agricultural product. This ingredient is used generously and luxuriously, and the shochu is prepared using traditional sake brewing methods such as "sake yeast," "yellow koji," "three-stage preparation," and "low-temperature fermentation." This results in a truly enjoyable drink with the authentic aroma of barley shochu and a refined palate.
"Shinrokaku" is named after the drum tower located at the top of the Dogo Onsen Main Building, Japan's oldest famous hot spring, which also appears in the Nihon Shoki (Chronicles of Japan). It is derived from the legend of a white heron that, in ancient times, visited the hot spring with an injured leg and healed its wounds in the gushing waters. Taking this name, "Shinrokaku" is encased in a rare crimson bottle that evokes the striking and impressive "red giyaman" (cut glass) adorning the "Shinrokaku."
