Founded in 1895. A passionate sake, crafted with the skills of brewers nurtured over more than a century of history.
We polish "Yamada Nishiki," the highest quality sake rice, down to 35%, paying meticulous attention to rice breakage and water absorption during washing. We use "EK-1," a yeast developed in Ehime Prefecture with a high rate of gold medal awards at sake competitions, and brew and store the sake in "thermal tanks" equipped with a dedicated cooling system. The moromi is slowly fermented at low temperatures. By employing the "fukuroshibori" (bag pressing) method, we achieve a clear sake with no off-flavors, an elegant aroma, a superior finish, and a gorgeous taste.
You can enjoy a gorgeous ginjo aroma, a mellow, melon-like fragrance, a fresh and crisp taste, and a refreshing mouthfeel. It pairs well with lightly flavored dishes, and we recommend "white fish sashimi," "kobujime," "boiled crab," and "wild vegetable tempura." Chilling it will further enhance its aroma.
