Dogo Rum Gold, a
By fermenting black sugar syrup made from sugarcane juice with sake yeast, characteristic of a sake brewery, and then low-temperature distillation using a vacuum still, a clear, colorless "white rum" with a faint, sweet aroma derived from sugarcane and no off-flavors is produced. This "white rum" is then aged in barrels to impart barrel aromas.
The barrels used, American white oak and sherry casks, are aged in stages to bring out rich aromas reminiscent of vanilla and nuts.
The molasses used in "Dogo Rum," made from squeezed "sugarcane," is produced by the "Lohas Enterprise Cooperative" in Doi-cho, Shikokuchuo City, Ehime Prefecture.
Doi-cho, where the "Lohas Enterprise Cooperative" is located, has been a thriving area for sugarcane cultivation and brown sugar production since the beginning of the Meiji era, a town where people would chew on sugarcane and each household would make brown sugar.
Currently, they are transforming abandoned and idle land into vibrant green sugarcane fields, and through handmade brown sugar production, they are engaged in activities to pass on brown sugar and natural Japanese food culture to younger generations and people around the world.
